Woooo Vegan! I am definitely not a vegan but it’s great for the planet so I made literally the easiest Vegan cake recipe ever! I made up this recipe to use up a tonne of gross fluffy apples that my family were never going to eat and it turned out pretty damn good.
Firstly, you need to set your oven to 180 degrees. Next (this is pretty much the hardest part) you need to prepare a million apples. You pretty much just peel them, quarter them, and remove the cores. You can use the peels and cores for compost and if there are little brown gross bits in the apples you can just cut them out.
You can see the apples browning in the air but it really doesn’t matter. You need to grate the apple pieces, mind your fingers! Please don’t hurt yourself doing this, if you’re left with little chunks of apple than that’s fine, this is a tasty cake, not a beautiful one.

Next just add the juice of one lemon and a couple of tablespoon-fulls of elderflower cordial and work the liquid through the Apple.
Add the flour and sugar and combine with a fork until it’s all mixed in together.
Once that’s done, line a loaf tin with foil and pour in the mixture. Bake for 40 minutes until it looks for this:
It’s a little bit ugly but I swear it’s gorgeous! Let cool a little bit but it’s best served hot with ice cream (vegan obviously).
